Catershop were asked to design a new kitchen, preparation and storage facility with the existing 17th Century grade I listed building.
Our brief was to design and produce a 21st century kitchen. Custom fabricated cantilever type stainless steel preparation equipment allow easy cleaning and maintenance. The main cooking suite was a semi bespoke Charvet unit designed in accordance with the chef’s requirements. The suite is backed up with Rational combination ovens and Blodgett convection ovens.
Refrigeration for the project is made up of counter chillers and bespoke walk in rooms, all supplied by Foster Refrigerator.
The ventilation system was by far the most challenging aspect of the project. The existing kitchen has stone vaulted ceiling of architectural merit. English heritage would only allow us to use the existing available fixing points. With the new system 25% bigger than the previous canopy, and now incorporating fresh air supply and UV filtration technology the lack of additional fixing presented us with some serious issues. The revised unit is fitted with structural floor supports to counteract this. External custom fabricated colour co-ordinated duct exit louvers were manufactured and fitted to the external arched windows.
In addition to the full kitchen facility Catershop also installed the Altro Vinyl floor finish and wall tiles.
This project was completed May 2007 on time and within budget. We are pleased to say the client is delighted with the new facility.
